Miss Slik's Eggs Florentine Recipe

OK, so I know the pic perhaps leaves something to be desired. But here is what I've been eating for breakfast lately. It's low sodium, low calorie, hearty, and super easy to make. I also discovered this morning that it is a great breakfast to make for overnight guests that you might be hoping to impress with your cooking skills, particularly those of the *ahem* adult sleepover variety. I modified it from this recipe Easy Eggs Florentine.


Ingredients:

  • 1/2 Cup Frozen Chopped Spinach
  • 2 Whole Large Eggs
  • 1 Tbsp Apple Cider Vinegar
  • 1 Slice 2% Swiss Cheese
  • 2 Tbsp Lite Cream Cheese (I tried the Green Mountain Farms Cream Cheese & Greek Yogurt blend which is actually lower in fat and better tasting)
  • Thomas' Bagel Thins - Everything (my preference but you can do plain or whole wheat too)
  • 1 Tbsp Kraft Three Cheese Blend Parmesan, Romano & Asiago
  • 3-4 Tbsp Water
  • 2-3 Tbsp 2% Milk
  • Seasoning to taste (I use garlic powder, fresh ground pepper, oregano, and basil)
***These are guesstimates and you can adjust them to your liking.
***This is for one serving. If you're making it for a guest then double up the amount of ingredients.

Preparation:

Put spinach in nonstick skillet with water and apple cider vinegar and seasonings. Heat over medium heat until the spinach thaws and most of the water boils off. Scramble in eggs and add milk. Cover and let eggs steam cook for a few minutes (keep an eye on them because they cook fast). Remove lid. Add swiss and 3 cheese blend then re-cover and let cook checking every minute or 2 to see if cheese is melted. Meanwhile toast bagel thins and schmear with cream cheese. Once the eggs florentine looks all cooked and gooey then top bagels with it. Garnish with fruit (I used sliced bananas drizzled with raw honey and a little cinnamon).

Total Calories - 443
Carbs - 32.29g (like I've said before don't believe the hype on that low carb/no carb BS)
Protein - 33.46g (yeah, that's a lot of protein)
Fat - 21.50 (most of that is the eggs so it's good fat)
